Rosemary Chicken Meatballs

with creamy sun dried tomato orzo

1. Cook Orzo and Prepare Ingredients In a large pot, bring 1½ litres salted water to a boil. Add orzo and cook for 5–7 minutes, or until al dente. Reserve 2 cups pasta water and drain pasta in a sieve. Pick and chop parsley and rosemary leaves separately. Roughly chop sun dried tomatoes. Chop the garlic. Thinly slice the shallot.
2. Prepare Meatballs Meanwhile, drain chicken. In a large bowl, combine chicken, panko breadcrumbs, rosemary and spice blend. Season well with salt and pepper. Combine with clean hands and roll into ten 1 inch round meatballs. Wash hands with hot, soapy water.
3. Begin Meatballs Heat 1 tbsp. olive oil in a large non-stick skillet over medium-high. Once hot, add meatballs and cook for 3–4 minutes, turning occasionally, until golden. Remove from skillet and set aside on a plate. Carefully wipe out skillet with paper towel.
4. Begin Sauce and Finish Meatballs Heat 2 tbsp. butter in the same skillet over medium. Once melted, add shallot and cook for 1–2 minutes, until golden. Add garlic and cooking wine and cook for 30 seconds, until most liquid evaporates. Stir in whipping cream, dijon mustard, tomato paste, 1/2 cup pasta water and red pepper flakes to taste. Return meatballs to skillet. Cover with a lid and cook for 3–4 minutes, or until chicken reaches an internal temperature of 165°F.
5. Finish Orzo Gently stir in spinach, sun dried tomatoes, orzo and grana padano. Cook for 1–2 minutes, until spinach is wilted. Taste and adjust seasoning with salt and pepper. Add 1 tbsp. pasta water at a time until desired consistency is reached.
6. Serve Divide orzo and meatballs between serving bowls. Garnish with parsley. Enjoy!
