Roasted cauliflower vegetarian gyros

with fries and tzatziki sauce

1. Setup Preheat the oven to 425 ° F. Cut the cauliflower into florets. Slice the cucumber. Cut the tomato into quarters. Mince the onion. Cut the potatoes into sticks. Chop the garlic and dill.
2. Cook the potatoes and the cauliflowers Mix the potato sticks together with half of the spice blend and a drizzle of olive oil. Spread out on half a baking sheet. Mix the cauliflower florets with the remaining spices, a drizzle of olive oil and 1 tbsp of red wine vinegar. Spread out on a baking sheet and bake for 20-25 minutes.
3. Make the sauce In a bowl, combine the yogurt, the juice of half a lemon, the garlic and the dill. You can reduce the garlic to adapt to your children's preferences. Mix well and season with salt and pepper.
4. Plate your dish Garnish the pita breads with the tzatziki sauce, add the roasted cauliflower, cucumbers, tomatoes and red onions. Serve with the fries. Bon appetit!
