Ricotta Ravioli in Bolognese Sauce

with fresh basil and arugula

1. Begin Bolognese Bring 2 litres salted water to a boil in a large pot. - Heat 2 tbsp. olive oil in a large skillet over medium–high. Drain ground beef (or customized protein). Once hot, add beef (or customized protein) and cook for 3–4 minutes, breaking apart with a wooden spoon. Add onion, carrot, celery, oregano, bay leaf and red pepper flakes to taste and cook for 3–4 minutes until softened. Add garlic, red wine and cook for 1 minute until wine fully evaporates. Add tomato blend, demi glace seasoning, 3/4 cup water and bring to a boil. Reduce heat to medium and cook on a low boil for 8–10 minutes until sauce thickens and beef reaches an internal temperature of 165°F.
2. Cook Ravioli Once water from Step 1 is boiling, add ravioli and cook for 8–10 minutes until al dente. Reserve 1 cup pasta water and drain in a sieve. Set aside and reserve for Step 4.
3. Prepare Ingredients and Arugula Salad Meanwhile, pick basil leaves. Tear any large leaves into 1 inch pieces. In a medium bowl, combine arugula, 1/2 tbsp. olive oil and a quarter of the parmesan.
4. Finish and Serve Add cooked ravioli and basil to bolognese and cook for 1–2 minutes, stirring to combine. Stir in 1 tbsp. of butter if desired. Add 1 tbsp. pasta water at a time until desired consistency is reached. Season to taste with salt and pepper. Divide ravioli and bolognese between serving bowls. Garnish with arugula salad and remaining parmesan. Enjoy!
