Quick Tomato Confit Bruschetta

with slices of garlic, thyme and basil

1. Setup Preheat the oven to 300°F. Cut the cherry tomatoes in half. Thinly slice the garlic cloves. Remove the thyme leaves from the stem. Slice the bread into croutons.
2. Confit the tomatoes Put the tomatoes, the garlic and the thyme in a baking dish. Add 1/2 2P | 2/3 3P cup of oil, a pinch of sugar and a pinch of salt. Mix together. Bake in the oven for 25-30 minutes.
3. Cook the bread Place the bread slices on a baking sheet. Bake in the oven for 15-18 minutes or until they're lightly browned.
4. Plate your dish Garnish the croutons with the tomatoes, the garlic, the basil leaves and the parmesan. Add salt and pepper to taste. Bon appétit!
