Pulled Pork Tostadas

with tomato, cucumber, feta, jalapeño and sour cream

1. Setup Thinly slice the shallot and the cucumber. Cut the tomato into small cubes. Crumble the feta. Separate the cilantro leaves from the stems. Cut the lime into wedges.
2. Pickle the onion If desired, place the shallot in a bowl. Add 1/3 cup of water, ¼ cup of vinegar, a pinch of salt and 1 tbsp. of sugar in a small saucepan. Bring to a boil. Pour over the shallot and let marinate.
3. Heat the pork Place the pork in a skillet with 1-2 tbsp. of water. Heat over medium heat until pork is warmed through.
4. Cook the tortillas Heat a drizzle of oil in a large pan on medium-high. Cook the tortillas for about 1-2 minutes on each side until colored and crispy. Remove from the skillet and place on a paper towel.
5. Plate your dish Garnish the tortillas with the pork, vegetables, sour cream, feta cheese, cilantro and jalapeño slices (spicy!) if desired. Add some lime juice. Bon appétit!
