1. Setup
Chop the red onion and cilantro. Cut the pepper and tomatoes into small cubes. Drain and rinse the corn and the red beans. Set 1/3 of the chopped red onion aside if you want to save some to garnish at the final step.
2. Cook the vegetables
Heat a drizzle of oil in a large pan on medium high. Add the red onion, pepper, tomatoes and the spices to taste (spicy). Add a pinch of sugar, salt and pepper. Cook 3-4 minutes until colored. Crush the tomatoes with a potato masher.
3. Add the beans
Add the pulled pork, kidney beans, corn, 0.5 2P | 1 3P beef broth cube and 1.5 2P | 2 3P cups of water. Bring to a boil and cook 6-8 minutes until the liquid has reduced. Adjust salt and pepper to taste.
4. Plate your dish
Serve the chili into bowls. Garnish with the raw onion to taste, cilantro and the sour cream. Bon appétit!
