Pork Cuban Sandwich

with chipotle mayonnaise and chips

1. Cook the pork In a skillet over medium-high heat, add a drizzle of olive oil. Season the pork chops with salt and pepper and cook in the pan for 3-4 minutes on each side. Remove and leave to rest for a few minutes before cutting.
2. Setup Chop half of the pickle and slice the rest. Cut the lime in half. Slice the *breads in half, lenghtwise. Finely slice the pork**.
3. Make the sauce In a mixer or using an arm blender, make a smooth sauce with the mayonnaise, the chopped pickles, the adobo pepper and the juice of half a lime.
4. Assemble Top buns with the pork, the cheese, the pickles and the sauce. Close well. Kids can garnish their own sandwich.
5. Cook the sandwich In a skillet or panini press, cook the sandwich 2-3 minutes each side or until the cheese is melted.
6. Plate your dish Serve the sandwiches with the chips. Bon appétit!
