1. Setup
Preheat the oven to 400 ° F. Chop the green onions. Cut the lettuce into pieces. Cut the tomato into quarters. Cut the corn into big pieces.
2. Cook the rice
Rinse the rice. In a pot, add the rice the bouillon cube and 1.5 2P | 2 3P cups of water. Bring to a boil. Reduce the heat to low, cover and cook 10 to 12 minutes.
3. Cook the chicken and the corn
Spread the chicken drumsticks and the corn on a baking sheet. Season with salt and pepper.
Brush the chicken drumsticks with some of the piri-piri sauce. Bake in the oven for 22-25 minutes.
4. Make the salad
In a bowl, combine the lettuce with the tomatoes. Add a drizzle of olive oil, 1 tbsp of cider vinegar if desired, salt and pepper.
5. Plate your dish
Serve the chicken with the corn, the rice, salad and remaining sauce. Garnish with the green onions. Bon appetit!
