Philly Cheesesteak style Quesadillas
with bell pepper, onion, tomato salsa and spicy mayo

1. Prepare Ingredients
Cut bell pepper in half and remove stem and seeds. Slice into 1/4 inch strips. Dice tomato into 1/2 inch pieces. Finely chop half of the onion.
2. Cook Beef
Heat 1 tbsp. oil in a large skillet over medium-high. Once hot, add bell pepper and sliced onion and cook for 3–4 minutes, or until tender. Add beef and steak spices and cook 3–4 minutes, until beef is golden, or an internal temperature of 165°F. Season to taste with salt and pepper. Transfer to a plate and wipe skillet clean with a paper towel.
3. Prepare Salsa
In a medium bowl, combine tomato, chopped onion, 1 tbsp. oil and the following to taste: vinegar blend, salt and pepper.
4. Assemble Quesadilla
Lay tortillas on clean countertop. Divide half of the cheese on the bottom half of each tortilla. Divide beef filling between tortillas on top of cheese. Top with remaining cheese. Fold tortillas in half over filling, pressing down to flatten.
5. Cook Quesadilla
Heat 1 tsp. oil in the same skillet over medium. Once hot, carefully transfer quesadillas to skillet. Cook for 4–5 minutes, using a spatula to flip halfway through, until tortillas are crispy and golden.
6. Serve
Slice quesadillas into wedges and serve with spicy mayo and salsa. Enjoy!
