Pear and Date Quinoa "Oatmeal"
with toasted almonds, maple syrup, currants and cinnamon

1. Cook the quinoa
Bring a large pot of water to a boil. Cook the quinoa for 10-12 minutes. Drain.
2. Setup
Cut the pears into small cubes. Roughly chop the dates.
3. Toast the almonds
Heat up a pan over medium-high heat. Roast the almonds in the pan for 3-5 minutes or until colored. Remove from the pan.
4. Cook the pears
Add 1-2 tbsp. of butter in the pan with the pears, the dates and half of the maple syrup. Cook 3-5 minutes or until tender.
5. Cook the quinoa
Put the cooked quinoa in a pan with the milk, the currants, the cinnamon, the vanilla, a pinch of salt and the rest of the maple syrup. Cook over medium-high heat about 4-5 minutes or until the quinoa absorbs most of the milk.
6. Plate your dish
Serve the quinoa and garnish with the pear mixture and the almonds.
