with a creamy spinach and cucumber salad and toasted ciabatta

1. Setup Bring a pot of salted water to a boil. Chop the onion and the garlic. Cut the tomatoes into cubes. Thinly slice the cucumbers. Cut the ciabatta in half and then into 4 pieces.
2. Cook the pasta Cook the pasta 9-11 minutes in the boiling water until tender. Keep 1/4 2P | 1/3 3P cup of the cooking water and drain.
3. Cook the tomatoes Heat a drizzle of oil with 2 tbsp of butter in a pan over medium-high heat. Cook the onion, tomatoes, garlic and 1 tsp. of sugar for 3-4 minutes. Add salt and pepper. Add 1/3 2P | 1/2 3P cup of water and simmer over medium heat for 3-4 minutes. Meanwhile, toss the spinach in a bowl with the cucumber, cream to taste, salt and pepper. Set aside.
4. Make the sauce Crush the tomatoes using a potato masher. Add the tomato paste and 1 tbsp of butter and mix. Add salt and pepper to taste.
5. Add the pasta Add the pasta and the cooking water to the pan. Mix 1 minute. Toast the slices of ciabatta. Season with butter or a drizzle of oil.
6. Plate your dish Serve the pasta with the basil, the salad and the toasted bread. Kids could choose the amount of basil they like. Bon appétit!
