1. Setup
Preheat the oven to 350°F. Thinly slice the mushrooms and zucchini. Chop the onion and the garlic.
2. Cook the mushrooms
Heat a drizzle of oil in a large pan on medium-high. Cook the onion and mushrooms for 3-4 minutes. Add salt and pepper.
3. Add the zucchini
Add the zucchini and mix well. Cover and cook for 5-7 minutes over medium-low heat to soften the zucchini. Mix a few times. Add the garlic and cook for 1 minute. Adjust seasoning to taste.
4. Garnish the bread
Place the flatbread on a baking sheet lined with baking paper. Garnish with the mushroom and zucchini mixture. Add the Swiss cheese on top. Bake in the oven for 10-12 minutes until the cheese is melted.
5. Plate your dish
Meanwhile, cut the cucumber into cubes. Toss the spinach with the cucumber, sunflower seeds, a drizzle of oil, salt and pepper. Add some vinegar to taste. Serve the flatbread with the salad.
