1. Setup Preheat the oven to 400F. Cut the potatoesinto small cubes. Cut the ham into small pieces. Chop the broccoli into smalls florets. Chop the jalapeños.
2. Cook the potatoes Heat a drizzle of oil in a pan over medium heat. Add the potatoes and the spice mix. Add salt and pepper to taste. Cook for about 20-25 minutes.
3. Cook the mini quiches Meanwhile, mix together the egg and the cream. Add salt and pepper to taste. Grease 6 2P | 9 3P muffin molds with butter. Add the ham, jalapeños and the broccoli. Pour the egg mixture into the molds and top with cheese. Cook in the oven for about 15 minutes. You can adjust the quantity of jalapeños if some like it less spicy.
4. Plate your dish Toast the bread to taste. Serve with the potatoes and the mini quiches. Bon appetit!
