1. Cook the vegetables Preheat the oven to 400°F. Slice the sweet potato(es) into thin rounds. Cut the cauliflower into small pieces. Coat both with a drizzle of oil, the spices, salt and pepper. Place on a sheet pan lined with parchment paper. Cook in the oven for 18-22 minutes.
2. Setup Thinly slice the cucumber and the shallot. Cut the tomatoes into quarters or cubes. Slice the bocconcini or tear into pieces.
3. Pickle the shallot If you want, put the shallot in a bowl. Add 1/2 cup of water, ¼ cup of vinegar, a pinch of salt and 1 tbsp. of sugar in a small saucepan. Bring to a boil. Pour over the shallot and let marinate.
4. Plate your dish Heat the pita for 1 minute in the oven. Serve all the ingredients on a plate with the pita bread. Place everything in the centre of the table and let your children fill their plates with the desired quantity of each ingredient. Bon appétit!
