1. Setup
Chop the cilantro. Cut the lime into quarters. Peel the corn.
On a plate, finely crumble the feta cheese.
2. Grill the corn
In a skillet, grill the corn for 10-12 minutes, turning them a few times so that they are grilled on all sides.
3. Make the mayonnaise mix
In a bowl, combine the mayonnaise and the sour cream.
4. Assemble
Brush the grilled corn with the mayonnaise mixture. Roll in the crumbled feta.
5. Plate your dish
Serve the corn with the lime wedges. Garnish the corn with the chipotle powder
and the cilantro. Add the lime juice, to taste. Bon appétit!
