1. Prepare Tumeric Rice
Rinse and drain rice in a fine mesh sieve. Add rice to a small pot with rice spice, 1 tbsp. butter and 1¼ cups salted water and bring to a boil. Reduce heat to low and cover with a lid. Cook for 12–15 minutes, or until grains are tender.
2. Prepare Ingredients
Meanwhile, pick and finely chop mint and parsley leaves separately. Dice tomato and cucumber into 1/2 inch pieces. Peel garlic and trim ends. Chop garlic.
3. Cook Lamb
Drain lamb and pat dry with paper towel. Heat 1 tbsp. olive oil in a large non-stick skillet over medium. Once hot, add garlic, half of the onion and cook for 2–3 minutes, until softened. Add lamb and cook 3–4 minutes, breaking it apart with a wooden spoon, until starting to brown. Add lamb spice and season to taste with red pepper flakes, salt and pepper. Cook 1–2 minutes or until lamb reaches and internal temperature of 165°F.
4. Prepare Mint Yogurt
Meanwhile, in a small bowl, stir together Greek yogurt, mint and season to taste with half of the lemon juice, salt and pepper. Add 1 tbsp. water at a time until desired consistency is reached.
5. Prepare Tomate Salad
In a medium bowl, combine 1 tbsp. olive oil with tomatoes, cucumber, parsley and remaining onion. Season to taste with remaining lemon juice, salt and pepper.
6. Plate and Serve
Divide turmeric rice, tomato salad and mint yogurt between serving plates. Top turmeric rice with lamb. Enjoy!
