Masala Chili Con Carne

fusion beef chili with Middle Eastern spices on couscous with lime, yogurt and cilantro

1. Setup Chop the cilantro. Cut the tomato into cubes. Grate the carrot. Drain and rinse the beans.
2. Cook the beef Heat a drizzle of oil in a large pan on medium-high. Cook the beef and the spices for 3-4 minutes. Add salt and pepper.
3. Add the beans Add the tomato paste, tomato, carrot, 1 tsp of sugar, 0.5 2P | 1 3P can of beans, 0.5 2P | 0.5 3P broth cube and 175 ml | 300 ml of water. Bring to a boil. Reduce the heat to medium and simmer for 6-8 minutes. Adjust salt and pepper to taste.
4. Cook the couscous Meanwhile, bring a saucepan with 1 2P | 1.5 3P cups of water and 0.5 2P | 0.5 3P broth cube to a boil. Pour the couscous, cover and let the couscous absorb the liquid off the heat, about 5 minutes. Break up the couscous with a fork. Add a drizzle of oil, salt and pepper.
5. Plate your dish Serve the beef chili on the couscous and garnish with the yogurt, cilantro and lime juice to taste. Bon appétit!
