1. Setup
Preheat the oven to 375°F. Drain the lobster. Grate the cabbage and carrot. Cut the corn in 2. Cut the pickle into 4 wedges. Keep 1 wedge per person if desired and chop the rest of the pickle. Thinly slice the green onion.
2. Prepare the patty mixture
In a food processor, add the lobster, half the green onion, the egg, 1/3 the spices, the panko and 30 2P | 45 3P ml of mayonnaise. Grind until you get a patty mixture that holds together. Shape the mixture into cakes, put on a plate and refrigerate for 20-30 minutes.
3. Cook the potatoes
Cut the potatoes into cubes. Place the potatoes on a baking sheet lined with baking paper. Add the rest of the spices, a drizzle of oil, salt and pepper. Bake in the oven for 35-38 minutes until browned and tender.
4. Prepare the salad
In a bowl, mix the cabbage with the carrot, the remaining green onion, a drizzle of oil, 1-2 tbsp. of cider or wine vinegar, a pinch of sugar, salt and pepper. Set aside. In another bowl, mix the remaining mayonnaise with the chopped pickle and a dash of lemon juice.
5. Cook the patties
Place the lobster cakes on a baking sheet lined with baking paper. Bake in the oven for 22-25 minutes, flipping halfway through. Meanwhile, bring a pot of salted water to a boil. Cook the corn 8-9 minutes until tender. Drain.
6. Plate your dish
Serve the cakes with the mayonnaise, potatoes, pickle, coleslaw and corn. Bon appétit!
