Loaded Vegan Queso-Dillas

with Pepper, Broccoli and Kidney Beans

1. Prepare Ingredients Cut broccoli into 1 inch pieces. Cut bell pepper in half and remove stem and seeds. Slice bell pepper into 1/4 inch strips. Pick and chop cilantro leaves. Cut lime in half. Drain and rinse kidney beans in a sieve.
2. Cook Filling Heat 2 tbsp. oil in a large non-stick skillet over medium-high. Once hot, add broccoli, bell peppers and onion. Cook for 4–5 minutes, tossing occasionally, until vegetables are tender and golden. Add garlic, spice blend and season to taste with ground chipotle pepper. Stir regularly for 1 minute or until fragrant. Add kidney beans and cook 2–3 minutes, stirring occasionally, or until beans are warmed through. Taste and adjust seasoning with salt and pepper.
3. Marinate Cabbage Meanwhile, in a medium bowl combine cabbage, 1/2 tbsp. olive oil and half of both cilantro and lime juice to taste. Taste and adjust seasoning with salt.
4. Assemble Queso-Dillas Lay flour tortillas on countertop. Divide cashew queso evenly between all tortillas, spreading it all over each tortilla. Divide filling between tortillas placing it on the bottom half. Top with remaining of both cilantro and lime juice to taste. Fold each tortilla in half over filling, pressing down to flatten.
5. Cook Queso-Dillas Wipe skillet from Step 2 with paper towel. Heat 1 tsp. olive oil in skillet over medium. Once hot, carefully transfer two queso-dillas to skillet. Cook for 5–6 minutes and use a spatula to flip halfway through until tortillas are crispy and golden. Repeat with remaining queso-dillas.
6. Plate and Serve Slice queso-dillas into wedges and serve with a side of marinated cabbage and salsa fresca for dipping. Enjoy!
