Lemongrass Tofu Lettuce Wraps

with shiitakes and carrot-daikon pickels

1. Pickle Vegetables In a medium bowl, combine carrot and daikon with half of the vinegar blend. Season to taste with salt and pepper. Toss well to coat and set aside to marinate.
2. Begin Tofu Dice shiitake mushroom into 1/2 inch pieces. Drain and pat dry tofu (or customized protein) with paper towel. Heat 2 tbsp. oil in a large non-stick skillet over medium-high. Once skillet is hot, add mushroom and with clean hands crumble tofu into skillet, with pieces no larger than 1/2 inch (add customized protein). Cook for 8–10 minutes, turning frequently until tofu is golden.
3. Prepare Lemongrass Glaze Meanwhile, zest and cut lime in half. In a small bowl, combine lemongrass, ginger, soy sauce, coconut sugar, and the following to taste: sambal oelek, lime zest, half of the lime juice and remaining vinegar blend. Stir well to combine.
4. Finish Tofu Reduce heat to medium-low and mix lemongrass glaze and lime leaves into tofu and cook for 2–3 minutes until glaze has absorbed. Taste and adjust seasoning with with salt and pepper. Reduce heat to low and cover to keep warm.
5. Prepare Lettuce and Mint Pick and chop mint leaves. Add mint to the pickled vegetables. Trim bottom stem from lettuce and discard outer layer. Cut lettuce in half and separate leaves.
6. Assemble and Serve Remove lime leaves from tofu. Turn off heat and stir onion into tofu mixture. Stack lettuce leaves into approximately 8 piles of 2 leaves. Divide tofu mixture into lettuce leaves. Pile pickled vegetables on top and garnish with peanuts and remaining lime juice to taste. Enjoy!
