Lemongrass and Lime Grilled Chicken

with rice, peanuts, cucumber, bell pepper and sweet and sour sauce

1. Setup Cut the cucumber and bell pepper into thin strips. Chop the herbs and peanuts. Peel and finely chop the lemongrass and garlic. Zest the lime and cut into wedges.
2. Cook the chicken Place the chicken in a bowl with the lemongrass, Hoisin sauce, zest and juice of half a lime, a drizzle of oil, salt and pepper. Heat a skillet or grill over medium-high heat. Add the chicken and cook 3-4 minutes on one side until browned. Flip, cover and cook 7-9 minutes over low heat until the center is cooked.
3. Cook the rice Bring a pan with 310 2P | 430 3P ml of water to a boil. Add the rice, cover and cook for 10-12 minutes over low heat.
4. Season the vegetables Mix the cucumber with the pepper, herbs, peanuts, a drizzle of oil, 1 tbsp. of cider or rice vinegar, salt and pepper.
5. Make the sauce In a bowl, put the sauce mix and add the juice of half a lime, the garlic and a pinch of sugar.
6. Plate your dish Serve the chicken with the rice, vegetables and sauce. Bon appétit!
