Lemon and Dill Salmon Burger

with tomato, lettuce and potato fries

1. Cook the fries Preheat the oven to 425°F. Cut the potatoes into thin slices. Place on a baking sheet lined with baking paper. Add a drizzle of oil, salt and pepper. Bake in the oven for 20-24 minutes until browned.
2. Setup Chop the dill. Zest the lemon. Cut the tomato into thin slices. Save a few leaves of lettuce for the burger and chop the rest. Cut the salmon into cubes.
3. Prepare the salmon patties Put the salmon in a food processor with the egg, half the dill, the zest and juice of half a lemon, salt and pepper. You can also chop it very finely with a knife. Grind until a homogeneous mixture is obtained. Put in a bowl and add the panko. Form 1 pancake per person.
4. Cook the patties Heat a generous drizzle of oil in a skillet over medium-high heat. Add the patties and cook 2-4 minutes on each side.
5. Prepare the sauce In a bowl, mix the mayonnaise with the remaining dill and the juice of half a lemon.
6. Plate your dish Heat the buns for about 1 minute in the oven. Garnish with the lemon mayonnaise, lettuce, salmon patty and a slice of tomato. Serve with the fries and the rest of the lettuce and tomato seasoned to taste and remaining mayonnaise. Bon appétit!
