Jerk Salmon with Apple Salsa

with quinoa, cilantro and yogourt

1. Cook the quinoa Bring a pot of water to a boil. Rinse and cook the quinoa for 12-15 minutes until tender. Drain.
2. Setup Cut the apple and the cucumber(s) into small cubes. Chop the cilantro. Thinly slice the radishes.
3. Make the salsa Mix the cucumber(s) with the apple, the radishes, the cilantro, a drizzle of oil, lime juice to taste, salt and pepper.
4. Cook the salmon Cover the salmon with the jerk spices (to taste, spicy). Add salt and pepper. Heat a drizzle of oil in a pan over medium heat. Cook the salmon for 3-4 minutes on each side or until desired doneness. To respect the food preferences of our children, serve the spices on the top if it's not okay for everyone. Adjust seasoning of the salmon with your favorite's family spices.
5. Plate your dish Serve the salmon with the quinoa, the apple salsa and the yogurt. Add lime juice to taste. If not, serve each part of the meal family-style serving and let your children make their own plate. Bon appétit!
