Japanese-Inspired Burritos

with Panko Chicken & Tonkatsu Sauce

1. Prepare Ingredients Pick and chop cilantro leaves. Cut cucumber into 1/4 inch slices.
2. Prepare Miso Slaw In a large bowl, whisk together miso, vinegar blend and 3/4 of the mayonnaise. Add green cabbage, carrot and cilantro, mixing until evenly coated. Season to taste with salt.
3. Prepare Chicken Drain chicken and pat dry with paper towel. Season well with salt and pepper. To a second large bowl, add chicken and flour blend. Combine until chicken is evenly coated. Using a sieve shake excess flour off of chicken and return to bowl. Add remaining mayonnaise to bowl and mix again. Add panko breadcrumbs and mix until each piece of chicken is fully coated.
4. Cook Chicken Heat 2 tbsp. oil in a large non-stick skillet over medium-high. Once hot, add chicken and lower temperature to medium. Cook for 5–7 minutes, turning regularly until golden all over and chicken reaches an internal temperature of 165°F. Add togarashi to taste, while the chicken is still warm.
5. Prepare Burrito Divide chicken and cucumber horizontally across centre of each tortilla, leaving 2 inches from either edge. Divide one-third of the miso slaw evenly between two burritos. Drizzle tonkatsu sauce over top and add pickled ginger. Fold the left and right outside edges in toward the centre over the filling, then fold the bottom edge upwards, and roll upward to close the burrito.
6. Toast Burrito and Serve Carefully wipe skillet with paper towel and heat over medium. Place burritos on skillet seam side down and cook for 2–3 minutes on each side, or until burrito is toasted. Cut burritos in half and serve with remaining miso slaw. Enjoy!
