Italian Sausage and Arugula Fettuccine

with cherry tomatoes and fresh oregano

1. Cook the pasta Bring a pot of salted water to a boil. Cook the pasta for 8-10 minutes until tender. Drain and keep 1/3 cup of cooking water.
2. Setup Chop the garlic. Thinly slice the sausages.
3. Cook the sausages Heat a drizzle of oil in a pan over medium heat. Cook the sausages, the garlic and the fennel seeds for 3-4 minutes. Salt and pepper (to taste).
4. Add the tomatoes Add the tomatoes and half of the oregano and cook for 4-5 minutes. Add the pasta, the cooking water, the arugula and half of the Grana Padano. Cook for 2 minutes. Add salt and pepper to taste.
5. Plate your dish Serve and garnish with the rest of the Grana Padano and the oregano. Add a drizzle of olive oil to taste. Bon appétit!
