Italian Calabrese Salami Sandwich

with garlic mayonnaise, arugula and marinated eggplants

1. Setup Preheat the oven to 400°F. Chop the garlic. Cut the loaves in half, lengthwise.
2. Make the sauces In a bowl, combine the garlic with the mayonnaise. In another bowl, place the honey and heat it up for 10 seconds in the microwave. Add the spice mix, to taste (caution! spicy) and mix well.
3. Assemble and cook in the oven Spread the garlic mayonnaise on the bottom halves of the loaves. Add the salami and the provolone slices. Cook in the oven for 5-6 minutes.
4. Assremble and cook in the oven Garnish the sandiwch with the arugula, the marinated eggplants and the spicy honey, to taste.
5. Garnish Serve the sandwiches. Bon appétit!
