with paprika spiced potatoes, scrambled eggs and prosciutto

1. Cook the potatoes Cut the potatoes in 2 or 4 depending on the size. Place in a saucepan with 1/3 of the paprika, salt and enough water to cover. Bring to a boil and cook for 6-8 minutes. Drain and let dry for 1-2 minutes.
2. Setup Finely slice the prosciutto and onion. Chop the parsley and garlic.
3. Cook the potatoes Heat a generous drizzle of oil in a skillet over medium high heat. Cook the potatoes and remaining paprika for 4-5 minutes until browned.
4. Add the eggs Add the onion and cook for 2-3 minutes. Add the garlic, eggs and chili flakes. Cook for 2-3 minutes while stirring until the eggs are cooked. Add salt and pepper to taste.
5. Plate your dish Add the prosciutto and mix it in. Serve and garnish with the parsley. Bon appétit!
