1. Prepare Salsa
Turn oven on to 425ºF. Pick and chop cilantro leaves. Cut avocado in half and remove pit. Dice into 1/2 inch pieces and scoop flesh out with a large spoon. Peel shaloot and trim ends. Dice shallot in 1/2 inch pieces. Peel garlic and trim ends. Chop garlic. In a small bowl, combine pineapple, cilantro, shallot, avocado and lime juice to taste. Season to taste with salt and pepper.
2. Prepare Salmon and Glaze
Drain and pat dry salmon with paper towel. In a second small bowl, whisk together garlic, glaze base, honey, 2 tbsp. water and sriracha to taste.
3. Warm Tortillas
Stack tortillas and wrap in foil. Place directly on oven rack and warm for 7–9 minutes until tortillas are warm and pliable. Keep wrapped until ready to serve.
4. Cook Salmon
Heat 1 tbsp. oil in a large skillet over medium-high. Once hot, add salmon and cook for 2–3 minutes, per side or until fish flakes and is at an internal temperature of 158°F. Reduce heat to low, stir in prepared glaze and cook for 30 seconds, stirring regularly, or until sauce slightly thickens. Turn off heat and carefully, using a fork, flake salmon into 1 inch pieces and coat well in glaze.
5. Prepare Cabbage
Meanwhile, in a medium bowl, toss cabbage with ranch dressing. Season to taste with salt and pepper.
6. Assemble and Serve
Divide tortillas onto serving plates. Top each tortilla with cabbage, glazed salmon and pineapple salsa. Enjoy!
