Honey, Garlic & Ginger Shrimp Noodles

with roasted camelina oil, bell pepper, green apple and cucumber

1. Setup Bring a pot of water to a boil. Slice the bell pepper into thin strips. Cut the apple into small cubes. Thinly slice the cucumber into half rounds. Chop the cilantro. Remove the tails from the shrimp. Grate or finely chop the garlic and the ginger.
2. Cook the noodles Cook the noodles in boiling water for 3-4 minutes or until tender. Keep 3-4 tbsp. of cooking water for step 4, then drain. Rinse under cold water to cool down.
3. Cook the shrimp Warm up a drizzle of oil in a pan over medium-high heat. Cook the shrimps for 4-5 minutes or until they're fully cooked. Add salt and pepper.
4. Make the sauce In a bowl, whisk the roasted camelina oil with the ginger, the garlic, the honey, the soy sauce and the pasta cooking water. Add 1 tsp. of rice or cider vinegar, if desired.
5. Plate your dish Mix the noodles with the shrimps, the vegetables, the apple, the cilantro and the sauce. Add salt and pepper, to taste. It is possible to leave everything in the center of the table like a salad bar and let everyone help themselves. Bon appétit!
