1. Setup
Bring a pot of water to a boil. Cut the tomato into small cubes. Chop the shallot and cilantro. Crumble the feta.
2. Cook the couscous
Cook the couscous in the boiling water 16-18 minutes. Drain and mix with a drizzle of oil, salt and pepper.
3. Cook the chicken
In a pan over medium heat, heat a drizzle of oil. Coat the chicken with half of the paprika (to taste), salt and pepper. Cover and cook 7-8 minutes on each side until cooked through. Watch to prevent the chicken from burning.
4. Make the salad
Meanwhile, mix the corn with the tomato, shallot to taste, cilantro, feta, mayonnaise, the juice of half of a lime , a drizzle of oil, salt and pepper. Having the kids make the salad will make them feel like little chefs!
5. Make the sauce
Mix the rest of paprika with the honey, lime juice to taste and 1/3 cup of oil. Brush on the chicken before serving.
6. Plate your dish
Serve the chicken with the couscous and the salad. Bon appétit!
