Hoisin Glazed Meatballs

with Sesame Broccoli and Coconut Rice

1. Cook Coconut Rice Turn oven on to 425°F. Rinse and drain rice in a fine mesh sieve. Add rice to a small pot with 1¼ cups salted water and coconut oil and bring to a boil. Reduce heat to low and cover with a lid. Cook for 10–12 minutes or until grains are tender.
2. Cook Brocoli Meanwhile, line a baking sheet with foil. Cut broccoli any large florets into 1 inch pieces. Toss broccoli with sesame oil on baking sheet. Season to taste with salt and pepper. Transfer to oven and cook for 17–19 minutes, until tender and turning golden.
3. Preapare Ingredients and Hoisin Sauce Thinly slice green onion. Pick and chop cilantro leaves. Peel garlic and trim ends. Chop garlic. In a small bowl, mix sauce blend, hoisin, honey, garlic, ginger and sambal oelek to taste. Set aside.
4. Prepare and Cook Meatballs Drain pork and pat dry with paper towel. In a medium bowl, add pork , spice blend, green onion and half of the sesame seeds. Season well with salt and pepper. With clean hands, mix well and form into 8 meatballs. Wash hands with hot, soapy water. Heat 1 tbsp. oil in large non-stick skillet over medium. Once hot, add meatballs and cook for 6–8 minutes, turning occasionally until golden. Add hoisin sauce and cook 2–4 minutes or until sauce thickens and meatballs are cooked to an internal temperature of 165°F.
5. Serve Divide coconut rice into serving bowls. Top with hoisin meatballs and broccoli. Garnish with cilantro and remaining sesame seeds. Enjoy!
