Hoisin Beef Bowl Kit

with Roasted Broccoli & Jasmine Rice

1. Prepare Ingredients Turn oven on to 425°F. Line a baking sheet with foil. Cut any large florets of broccoli into 1 inch pieces. Thinly slice green onion. Cut lime into wedges. In a small bowl combine carrot, daikon and pickle blend. Season well with salt and set aside to marinate.
2. Cook Rice Meanwhile, rinse and drain jasmine rice in a fine mesh sieve. Add rice to a medium pot with 2½ cups salted water and bring to a boil. Reduce heat to low and cover with a lid. Cook for 17–20 minutes or until grains are tender.
3. Cook Broccoli Toss broccoli on baking sheet with 2 tbsp. oil and half of the garlic. Season to taste with salt and pepper. Transfer to oven and cook for 17–22 minutes, or until tender and edges are crisp.
4. Cook Hoisin Beef Drain ground beef and pat dry with paper towel. Heat 1 tbsp. oil in a large non-stick skillet over medium-high. Once hot, add beef and cook for 4–5 minutes using a wooden spoon to break apart, and cook until beef has reached an internal temperature of 160°F. Add ginger, remaining garlic and cook for 1 minute until fragrant. Stir in red pepper flakes to taste, hoisin base, tomato paste and sesame oil. Cook for 2–3 minutes or until thickened. Turn off heat and stir in half of the green onion until evenly combined.
5. Serve Divide rice and broccoli between serving bowls and top rice with hoisin beef. Remove carrot, daikon from vinegar and divide between dishes. Garnish with sesame seeds and remaining green onion. Serve with a lime wedge. Enjoy!
