Havaiian Huli-Huli Chicken Burger

with Citrus Miso Tomato Salade

1. Prepare Ingredients and Sauce Cut tomatoes into 1/2 inch pieces. Slice cucumber into 1/4 inch rounds. Thinly slice green onion. In a small bowl, combine sauce blend, ginger, sriracha to taste and cornstarch. Set aside.
2. Prepare Patties Turn broiler on to 500°F. Drain ground chicken. To a medium bowl, add ground chicken, spice blend, breadcrumbs and and 1 tbsp. olive oil. Using clean hands, mix together and form two 1/2 inch thick patties. Wash hands with hot, soapy water.
3. Prepare Tomato Salad and Toast Buns Meanwhile, slice buns in half and place directly on oven rack, cut side up. Broil for 1–2 minutes or until golden, using a tongs to remove. Monitor closely to prevent burning. In a second medium bowl, combine three-quarters spring mix, tomatoes, green onion and half of the cucumber. Set aside.
4. Cook Patties and Huli-Huli Sauce Heat 1/2 tbsp. olive oil in a large non-stick skillet over medium. Once hot, add patties and cook 5–6 minutes on one side. Flip patties and top with Monterey Jack Cheese. Cover with a lid and cook for 4–5 minutes or until cheese has melted and patties reach an internal temperature of 165°F. Remove from skillet and set aside on a plate. Reduce heat to low, add prepared sauce and cook for 1–2 minutes, or until thickened.
5. Assemble and Serve To bowl with salad, add 1/2 tbsp. olive oil and dressing base, mixing until evenly combined. Season to taste with salt and pepper. Spread huli-huli sauce evenly onto cut sides of both buns. Top bottom buns with remaining cucumber and spring mix, patties and close with top buns. Place burgers on serving plates and serve with tomato salad on the side. Enjoy!
