1. Setup
Thinly slice the chives. Roughly chop the spinach.
2. Make the pancake batter
In a bowl mix the flour with the milk, 1 2P | 2 3P egg, 3/4 of the chives and a pinch of salt. Make sure the batter is thin.
3. Cook the crepes
Heat a drizzle of oil in a pan over medium high heat. Pour in a ladle of the mixture and turn the pan so that the mixture spreads out into a large crepe. Cook 1-2 minutes on each side. Repeat with the rest of the batter. Add oil as needed and reduce the heat if the pan gets too hot.
4. Cook the eggs
Heat a drizzle of oil in a pan over medium high heat. Cook the spinach 2-3 minutes. Add salt and pepper. Add the remaining eggs and the remaining chives and cook for 2 minutes or until the desired doneness. Remove the pan from the heat.
5. Plate your dish
Garnish each crepe with a slice of ham, Swiss cheese and the spinach eggs. Roll up and serve. Bon appétit!
