Halloumi and Grilled Vegetable Sandwich

with hummus and lemony arugula

1. Setup Preheat the oven to 425°F. Cut the bell pepper into sticks. Slice the onion and the halloumi. Cut the lemon in half. Cut the bread in half lengthwise.
2. Cook the vegetables Spread the bell peppers and the onions on a baking sheet. Drizzle with olive oil, season with salt and pepper. Cook in the oven for 15-20 minutes.
3. Cook the halloumi In a pan over medium-high heat, add a drizzle of olive oil. Grill the halloumi slices for 2-3 minutes on each side.
4. Make the lemony arugula In a bowl, combine the arugula, the juice of half a lemon and a drizzle of olive oil. Mix well, season with salt and pepper.
5. Assemble Toast the bread, if desired. Garnish the bread with the hummus, the grilled vegetables, the halloumi and the arugula. Close.
6. Plate your dish Serve the sandwiches. Bon appétit!
