Halloumi and Cherry Tomato Skewers

with spicy honey and a carrot, almond and mint couscous

1. Setup Cut the halloumi into big cubes. Grate the carrot. Mince the mint.
2. Cook the couscous Bring a pot of water to a boil. Cook the couscous 5-7 minutes until tender. Drain and rinse under cold water to cool.
3. Mix the honey Whisk the honey with the chilli flakes to taste (spicy!) and a generous drizzle of oil.
4. Make the skewers Thread the tomatoes and halloumi cubes onto the skewers.
5. Cook the skewers Heat a skillet over medium-high heat. Roast the almonds 3-4 minutes until golden. Remove from the pan. Add a drizzle of oil and cook the skewers for about 2 minutes on each side. Add salt and pepper to taste. For the BBQ: Preheat grill to medium high heat. Add skewers to a baking sheet and cook, turning occasionally, about 12-15 minutes.
6. Plate your dish Mix the couscous with the almonds, carrot, mint, a drizzle of oil, salt and pepper. Serve the couscous with the skewers and the spicy honey. Bon appétit!
