Hainanese Chicken Bowl

with a refreshing homemade ginger sauce

1. Adjust the steps of the recipe for your children To help your children get accustomed to new flavours and develop their tastebuds, you can serve the vegetables as crudites or in a salad bar. Try making the sauce with less raw garlic and sriracha. Or simply place everything in the centre of the table and let everyone serve themselves.
2. Cook the rice Bring a pot of water with 1.5 2P | 2 3P cups of water to a boil. Pour the rice, cover and cook over low heat for 10-12 minutes. Add a knob of butter and half of the chopped cilantro.
3. Cook the chicken (2 options) Heat a drizzle of oil in a pan over medium-high heat. Add salt and pepper to the chicken. Cook the chicken 4-5 minutes on one side. Flip the chicken, cover and cook 10-12 minutes over low heat. You can also poach the chicken as per the classic hainanese recipe (cook in boiling water 15 to 20 minutes).
4. Setup Cut the tomatoes into quarters. Slice the cucumber. Cut the pepper into thin strips. Chop the cilantro, garlic and ginger.
5. Make the sauce Whisk together the soy sauce, garlic, ginger, sriracha (to taste - spicy!), the rest of the cilantro, 1 tsp of sugar, 2 tbsp of oil and 1/4 cup of water.
6. Plate your dish Slice the chicken and serve in a bowl with the rice and the vegetables. Add some ginger sauce over the dish. Season to taste. Bon appétit!
