Grilled Balsamic Halloumi

on quinoa with curry spices, dried raisins, bell pepper, tomato and basil

1. Cook the quinoa Bring a pot of water to a boil. Pour the quinoa and raisins and cook 12-14 minutes until tender. Drain.
2. Setup Chop the shallot. Cut the bell pepper and tomato into small cubes. Mince the basil and cut the halloumi into 0.5-1 cm thick slices.
3. Mix the quinoa Heat a drizzle of oil in a pan on medium high. Cook the shallot, tomato and pepper for 3-4 minutes . Add the spices and cook for 1 minute. Add the cooked quinoa, mix and cook 2 minutes. Add salt and pepper. Add the half of the basil. Remove from the heat.
4. Cook the halloumi In a pan, bring the balsamic vinegar and the brown sugar to a boil. Add the halloumi slices and cook 1-2 minutes on each side until colored and coated.
5. Plate your dish Serve the halloumi on the quinoa. Garnish with the rest of basil. Bon appétit!
