Greek Style Seitan Sheet Pan
with zucchini, potato, cherry tomatoes and a garlic, lemon and oregano oil

1. Setup
Preheat the oven to 425°F. Cut the zucchini into slices about 1-2 cm thick. Cut the potatoes into small wedges or small cubes. Cut the seitan into medium cubes.
2. Make the oil
Finely chop the garlic and oregano. Zest the lemon. In a bowl, mix 1/3 2P | 1/2 3P cup of oil with the oregano, garlic, the zest, a dash of lemon juice, salt and pepper.
3. Bake in the oven
Place the potatoes, zucchini, tomatoes and seitan cubes on a baking sheet lined with baking paper. Add 3/4 of the oil to the vegetables and the seitan and mix well. Add salt and pepper to taste. Bake in the oven for 24-27 minutes until the potatoes are tender.
4. Plate your dish
Once out of the oven, garnish the baking sheet with the crumbled feta, the remaining oil and lemon juice to taste.
