Greek Chicken Bowl

with lemon potatoes, kale and hummus

1. Beging Potatoes Turn oven on to 425°F with rack positioned 6 inches from the top. Line baking sheet with foil. - Dice potato into 1 inch pieces. Place potato on one side of the baking sheet and toss with 2 tbsp. of oil, spice blend and season to taste with salt and pepper. Place into the oven and set a timer for 12 minutes.
2. Prepare Ingredients Cut stems out from kale and discard. Slice kale leaves into 1/2 inch pieces. Pick and chop dill and oregano leaves, keeping them separate. Dice cucumber into 1/2 inch pieces. Dice tomato into 1/2 inch pieces.
3. Prepare Kale In a medium bowl, combine kale, 1/2 tbsp. olive oil and season to taste with salt. Massage kale for 30 seconds until soft and bright green. Divide kale into serving bowls.
4. Prepare the salad To the same medium bowl from Step 3, add cucumber, tomato, onion, olives, dill, feta and red wine vinegar to taste. Season to taste with salt and pepper. Toss well to combine.
5. Finish Potatoes and Cook Chicken Drain and pat dry diced chicken with paper towel. Season well with salt and pepper. In second medium bowl, combine the following: chicken, oregano, garlic and lemon juice to taste. Once timer goes off from Step 1, add chicken to baking sheet and bake for 5–7 minutes. When timer goes off, turn broiler on high to 500°F. - Broil for 2–3 minutes, until potatoes are golden and chicken reaches an internal temperature of 165°F. Monitor closely to prevent burning.
6. Serve Divide salad, chicken and potatoes on top of kale in serving bowls. Dollop hummus on top of everything. -Enjoy!
