Goat Cheese And Herbs Soft Scramble Eggs

1. Setup Cut the tomato and the cucumber into small pieces. Cut the ciabatta into 2 or 4 slices. Finely chop the chives. Roughly crumble the goat cheese. Crack the eggs in a bowl.
2. Make the salad Mix the arugula with the tomato, the cucumber, some salt and some pepper. Add a drizzle of olive oil and balsamic vinegar, to taste, when serving the meal.
3. Cook the bread Warm up a drizzle of oil in a pan over medium-high heat. Cook the bread slices on the crumb side for about 2-3 minutes or until browned. Remove from the pan and reduce the heat to medium.
4. Cook the eggs Add 1 tbsp. of butter to the pan. When the butter is melted, add the eggs and mix for 10 seconds. Add the goat cheese (to taste), the chives, some salt and the lemon pepper (to taste). Cook for about 2-3 minutes or until the desired doneness. You can keep some goat cheese to garnish your toasted bread.
5. Plate your dish Serve the eggs with the salad and the bread. You can also let the children help themselves to their fill to develop their autonomy. Bon appétit!
