2. Setup
Preheat oven to 425°F. Thinly slice the zucchini and the red onion. Tear up the cheese into pieces.
3. Mix the gnocchi
Mix the gnocchi with the vegetables, pesto, a drizzle of oil, salt and pepper. Put on a lined sheet pan. Cook in the oven for 18-20 minutes.
4. Add the cheese
Remove the pan from the oven. Add the pieces of cheese. Bake in the oven for another 4-5 minutes.
5. Plate your dish
Serve the gnocchi and garnish with the oregano and a drizzle of oil. Bon appétit!
