1. Setup
Thinly slice the leek, mushrooms and Brie cheese. Finely crush the nuts.
2. Cook the gnocchi
Heat a generous drizzle of oil in a pan over medium-high heat. Cook the gnocchi 6-8 minutes until golden brown. Add salt. Remove from the pan.
3. Toast the nuts
Heat a small skillet over medium-high heat. Roast the nuts 3-4 minutes until lightly colored. Remove from the pan.
4. Cook the mushrooms
Add the leek, mushrooms and thyme to the pan that cooked the gnocchi. Cook 4-5 minutes over medium heat. Add salt and pepper.
5. Add the gnocchi and Brie
Add the cream, green peas and gnocchi to the pan. Mix together. Garnish with the slices of Brie. Cover and cook 4-5 minutes over medium-low heat.
6. Plate your dish
Serve the gnocchi and top with the walnuts. Bon appétit!
