1. Cook Rice
Rinse and drain rice in a fine mesh sieve. Add rice to a small pot with 1¼ cups salted water and bring to a boil. Reduce heat to low and cover with a lid. Cook for 15–18 minutes or until grains are tender.
2. Prepare Chicken and Sauce
Drain chicken and pat dry with paper towel. Cut any larger pieces of chicken into 1 inch pieces. In a large bowl, mix together egg whites, chicken and ½ tsp. of salt. Add flour blend to chicken and toss to coat each piece of chicken thoroughly. Peel garlic and trim end. Chop garlic. In a medium bowl, whisk together cornstarch, sauce mix, brown sugar, ginger, half of the garlic, and 1/4 cup cold water and set aside.
3. Prepare Cucumber Salad
Slice green onion into 1 inch segments. Smash cucumber with the flat side of the knife until it breaks open, then roughly cut into 1/2 inch pieces. In a small bowl, mix together cucumber marinade, sesame oil, remaining garlic and half of the red pepper flakes to taste. Add cucumber to marinade and season to taste with salt. Set aside.
4. Cook Chicken
Pour chicken into a fine mesh sieve and shake off excess flour. Heat 3 tbsp. oil in a large skillet over medium-high. Once hot, add chicken pieces one at a time and cook for 4–5 minutes each side, or until chicken reaches an internal temperature of 165°F. Add remaining red pepper flakes to taste into skillet and stir for 30 seconds, until fragrant. Reduce heat to low and stir prepared chicken sauce and green onion into skillet. Toss and cook for 1–2 minutes until sauce has thickened.
5. Assemble and Serve
Divide rice into serving bowls, top with chicken and cucumber salad. Garnish with toasted sesame seeds. Enjoy!
