Fresh herb crepes

with lemon goat cheese filling

1. Setup Chop the herbs
2. Make the crepe mix In a bowl, mix together the eggs and 300 2P | 400 3Pml of milk. Mix well and gradually add the flour. Add the herbs and season with salt and pepper.
3. Cook the crepes In a pan, on medium heat, add one tbsp of butter. Add some of the crepe mix to make a thin layer in the pan. Cook the crepes 1-2 minutes on each side.
4. Make the goat cheese filling In a bowl, mix together the goat cheese, the yogourt, the juice of a lemon. Season with salt and pepper.
5. Fill the crepes Put a spoonfull of the cheese mix inside half of the crepe. Fold the crepe in half and then fold again in 4. Reserve some of the cheese mix to add it on top of the folded crepes.
6. Plate your dish Serve the crepes with the goat cheese filling. Bon appétit!
