1. Make the fries
Preheat the oven to 425°F. Cut the potatoes into wedges or fries. Spread the potatoes on a baking sheet covered with baking paper. Add a drizzle of olive oil, salt and pepper. Cook in the oven for 28-32 minutes. Halfway through cooking, add the peppers (See step 3).
2. Make the chimichurri sauce
Chop the herbs and garlic. In a bowl, combine the herbs, the garlic, the juice of half a lime, 1 tbsp of red wine vinegar and 60 2P | 80 3P ml of olive oil.
3. Add the peppers on the baking sheet
When there are about 8-10 minutes left for the fries to cook, add the peppers to the baking sheet.
4. Cook the steak
In a pan over medium-high heat, add a drizzle of olive oil. Season the steak with salt and pepper. Cook the steak 3-4 minutes on each side or until desired doneness. Let rest for 4-5 minutes before cutting.
5. Plate your dish
Serve the steak with the potatoes, the peppers and the chimuchurri sauce.
