Feta and Corn Fritters

with Chipotle Mayo and Roasted Broccoli

1. Prepare ingredients Turn oven on to 425°F. Line a baking sheet with foil. Pick and chop cilantro leaves. Thinly slice green onion. Peel garlic and trim ends. Finely chop garlic.
2. Cook Broccoli Toss broccoli on baking sheet with 2 tbsp. oil and garlic. Season to taste with salt and pepper. Place baking sheet in oven and bake for 15–17 minutes, or until tender and edges are crisp.
3. Prepare Fritters Meanwhile, in a large bowl, whisk together buttermilk, egg, baking powder and 1/2 tsp. salt. Stir in flour, green onion, corn and crumbled feta. Mix well. Using clean hands, divide mixture into 8 balls. Wash hands with hot, soapy water.
4. Cook Fritters Line a plate with paper towel. Heat 2 tbsp. oil in a large non-stick skillet over medium-high. Once hot, carefully add to skillet and reduce heat to medium. Cook for 3–4 minutes, then flip and, using a spatula, press down on mixture lightly to flatten into 1 inch thick fritters. Cook for another 3–4 minutes until golden and crispy on the outside and mixture is cooked in the centre. Transfer fritters onto plate to absorb excess oil. Add additional oil if skillet is dry after each batch, as needed.
5. Prepare Chipotle Mayo Meanwhile, in a small bowl, combine mayonnaise, spice blend and cilantro. Season to taste with ground chipotle pepper, salt and half of the lime juice.
6. Serve Divide fritters onto plates. Add roasted broccoli and chipotle mayo on the side. Add any remaining lime juice over broccoli if desired. Enjoy!
