Duck Confit Quesadillas

1. Cook the duck
Preheat the oven to 400°F. Place the duck legs in a baking dish, skin side up. Bake in the oven for 15 minutes. Remove from the oven and shred the flesh using 2 forks. Set aside. Keep the oven on for the next steps.
2. Setup
Peel the squash using a vegetable peeler and cut into small cubes for a total of 3 2P | 4.5 3P cups. Thinly slice the onions. Cut the apple into small cubes.
3. Make the soup
Heat a drizzle of oil or butter in a pot over medium heat. Add the squash cubes, ¼ | 1/3 cup of onion and a sprig of thyme. Cook 5 minutes. Add the broth cube, 2 2P | 3 3P cups of water and the milk. Reduce the heat to medium-low and simmer for 15-20 minutes. Remove from the heat. Use a mixer or stick blender to blend the soup until smooth. Add a little water if necessary to reach desired texture. Adjust salt and pepper to taste. Keep warm.
4. Make the onion confit
Heat a drizzle of oil or butter in a pan over medium heat. Brown the onions for 5 minutes. Add the maple syrup, reduce the heat to low and simmer for 5 minutes. Remove from the heat and reserve.
5. Assemble the quesadillas
Place the tortillas on a sheet pan covered with baking paper. Place the duck, apples, onion confit and half of the cheese on half of each tortilla. Fold the tortillas in half. Bake in the oven for 10 minutes. Using a spatula, turn the tortillas and add the remaining cheese on the tortillas. Turn the oven to broil and cook for 2-3 minutes until browned (stay close to the oven during this step).
6. Plate your dish
Put the soup in bowls. Place the quesadillas on a sharing plate with the remaining onion confit to share. Bon appétit!
