1. Cook the rice
Bring 1.5 2P | 2 3P cups of water to a boil in a saucepan. Pour the rice, cover and cook over low heat for 10-12 minutes until the rice is cooked.
2. Setup
Thinly slice the onion and the mint. Chop the nuts. Drain and rinse the chickpeas.
3. Roast the nuts
Heat a pan over medium-high heat. Roast the nuts 3-4 minutes. Remove from the pan.
4. Cook the chickpeas
Add a drizzle of oil, the chickpeas and the spices to the pan. Cook 5-7 minutes until they become crispy. Add salt and pepper to taste.
5. Add the rice
Add the onion and the raisins to the pan and cook 3-4 minutes. Add the cooked rice, the nuts, green peas and 1 2P | 2 3P tbsp of butter. Mix and cook 2-3 minutes. Add salt and pepper to taste.
6. Plate your dish
Serve the rice and garnish with the feta and the mint. Bon appétit!
