Curry Cauliflower Bowl

with herbed couscous with sumac, hummus and fresh vegetables

1. Setup Bring a pot with 1 2P | 1.5 3P cups of boiling water. Chop the herbs. Cut the cauliflower into medium sized pieces. Thinly slice the tomato, cucumber and shallot.
2. Cook the couscous Pour the couscous in the boiling water, cover and remove from the heat. Allow the couscous to absorb the liquid for about 5 minutes. Mix the couscous with the shallot, sumac, herbs, lemon juice, a drizzle of oil, salt and pepper.
3. Cook the cauliflower Heat a generous drizzle of oil in a pan over medium-high heat. Add the cauliflower and spices and cook 6-8 minutes until browned. Add salt and pepper to taste.
4. Plate your dish Serve the couscous in a bowl and garnish with the cauliflower, vegetables and hummus. Add lemon juice to taste. Otherwise, leave everything in the middle of the table and let everyone help themselves. Bon appétit!
